 I see all these moms running around making elaborate Leprechaun traps, fancy treats, costumes…well, you name it, and I’ve seen the over-the-top, make-the-average-mom-look-bad crafts and projects and parties. This may very well come as a shock to some of you, but I am NOT a crafty mom. I used to think I wanted to be a crafty mom…but it looks like it takes a lot of time and energy and I would just rather put forth that time and energy hanging out than crafting. So far, I don’t think my kids have been scarred too much by my lack of craftiness. Now, I may not be crafty, but I still sure know how to have fun and most Holidays around here are memorable. (Let’s not talk about Valentine’s Day this year, please… I failed miserably by forgetting to leave a silly card for my kids to find when they wake up…Hey, I never said I was perfect! I think I redeemed myself by bringing home chocolate strawberries, though.)

How does a non-crafty mom make Holidays totally awesome you ask? The answer is simple! I have a private line to all the well-known Holiday spokespeople. The Easter Bunny, Santa…yes, even the Leprechauns. Having this “in” with these people really helps when you aren’t crafty! It just takes a quick call, email, or text message to confirm that my kids still get a thrill out of the little details of the Holiday, and I’m off the hook for crafting! A special treat will be dropped off by morning and I can get some much-needed sleep!

Such as it was for St Patrick’s Day! A quick “Go for Green” text message and I was off to bed at an early hour. The Leprechauns paid a visit, performed a bit of mischief with chairs on tables, stools turned upside down, milk turned green, even the fruit bowl turned upside down and the fruit stacked on top…and left a treat for the trouble of having to clean up after them. We all get a good giggle at their silliness every year, and this year was no exception.

Of course, this doesn’t let me off the hook for cooking dinner. We will still have our traditional Corned Beef and Cabbage. It is in the slow cooker now and will be ready when I get home from work. Another mealtime saved by the slow cooker!

Some days just require (espresso) shots and ice cream for dinner. Today was just such a day. I wouldn’t say I had a bad day, it just wasn’t particularly good. It began with receiving some sad news that didn’t quite allow itself to settle in. And then the day just went on as any usual day at the office would, people dropping in for different things throughout the day, appointments and meetings, coffee breaks (of course…I mean…it is MY office. There IS coffee!), just the usual goings on of the day. And then just before the day at the office ended, more sad news. And this time it took a good 15 or 20 minutes to settle into my heart and soul, and when it finally did, both bits of news settled into me all at once and it took all my strength to finish my day and get myself home to my babies.

Life is precious and short and sweet. Celebrate the smallest moments. They are the biggest. Hug someone you love a little tighter today and every day.  Call someone. Live; You Might Like It

So there’s this life I love. And in this jumbled, imperfect life, I try to find time to do all the things I love and, well, I just can’t fit it all in. So when it comes to choosing which things are priority, it’s the living of life that wins. The enjoying everyday, ordinary moments.
Of course, this means my blogging suffers, as does my housekeeping. But the thing that doesn’t suffer is life.
In a kitchen conversation with my girl child several months ago, we were talking about how I have done things I never would have dreamed of doing even just 2 years ago (things like accepting an invitation to go out on a boat with people I did not know…taking on new adventures…quitting my job…finding new joys in this crazy world), and how much more fun life is when you decide to live it. It was a “lightbulb moment” for both of us, especially for her. She excitedly yelled “Live; you might like it.”, and then ran out of the room. She returned, proud of herself, and apologizing for running out like that, but she said she wanted to write it down before she forgot.
And that night when I was getting ready for bed, I found this sticky note on my bathroom mirror. And there it stayed until moving day a few weeks ago, as a daily reminder to Live.
Oh, that’s right. You don’t know… After working 2 jobs to barely make ends meet for awhile, I was offered a new job. This new job allowed us to move out of our tiny apartment and into a nearly-perfect house, complete with garage, yard, garden, and an amazing kitchen! If we didn’t know any better, we’d think this house was built just for us. And maybe it was. And it’s just been waiting for us to be ready for it.
I have so many things to share with all of you, so many recipes, moments, new adventures, LIFE! I hope you’ll forgive me for Living Life and my delays in sharing about that amazingly imperfect perfect life!
Now, please do me a favor. Go. Live! You might like it, too!

Best Banana Bread

Over the past few months, I have promised several people that I would share my favorite banana bread recipe. It is not my own recipe, it is just my favorite. I mean, it’s hard to improve on a Betty Crocker recipe (but I think I managed, just because of my own special touches). The original recipe is here, which I found in a magazine-style recipe collection titled “Brunch”. I love brunch. Not because I’m pretentious and like to say things like “Let’s do brunch.” No, it’s because mornings come too early and I don’t like to cook in the early mornings, so if I’m cooking in the morning, it’s more likely to be a late breakfast/early lunch kinda thing, which is typically referred to as “Brunch”. (It’s laziness, not pretentiousness…lol)

Yesterday was a day off from my “day job”, so we had dinner early, which gave me time to make banana bread for dessert. The pictures and recipe, along with my commentary follow below:

Gather your ingredients:
1 1/4 cups sugar
1/2 cup butter or margarine, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups Gold Medal® all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired

You’ll see in the picture that I am using the vanilla sugar and vanilla extract I made back in April. I also had the girl child make some butter while I was gathering all my ingredients, and this produced just a bit of buttermilk, so I included that in the recipe so it didn’t go to waste. I love getting all the use out of our food as we possibly can!

Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2×4 1/2×2 1/2 inches, or 1 loaf pan, 9x5x3 inches.
Mix sugar and butter in large bowl. Stir in eggs until well blended. 

 

Add bananas, buttermilk and vanilla. Beat until smooth.

I know you’re “supposed to” mash the bananas before adding them. But I hate taking the extra step and dirtying an extra bowl (that I’ll have to argue with the kids about getting washed. Too much effort…). I use very brown bananas, smash them a little while they’re in the skin, and then you can use either a strong whisk or a potato masher to mix them into the batter.

Stir in flour, baking soda and salt just until moistened.

Stir in nuts. Pour into pans.

If it is ever said that I’m an evil mother who doesn’t care what her children like/want, let this serve as proof to the contrary. Banana bread needs walnuts. The girl child doesn’t like them. So, I mix nuts into just half the batter, and divide the batter in the pan so we get a half loaf with and a half loaf without walnuts. Then I sprinkle extra nuts on top for easy identification of which side is which.

Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

If you’re patient, you’ll let it cool completely like the recipe says. But if you’re me (or anything like me), you’ll wait just until it’s cool enough to touch and slice into it so it’s still nice and warm and the freshly made butter melts right into it! YUM!

Bountiful Baskets

Bountiful Baskets

I have discovered (with the help of my Baby Sis) an amazing resource for affordable fresh produce, and I’m wondering what took me so long to participate in the Bountiful Baskets Food Co-Op. I picked up my second basket this morning, and am so excited about all the fresh foods my kids and I will be having this week! Plenty of fruits and veggies to last us all week.

When I say affordable, by the way, I mean that I got all the produce you see in the picture for just $15! That’s right. I got 6 sweet potatoes, 3 small zucchini, a bunch of asparagus, a large head of lettuce, 2 heads of broccoli, 2 bags of brussels sprouts, a pineapple, a bunch of bananas, 3 grapefruit, 5 apples, and 7 oranges! Thatsalottafreshfood! Will we eat it all? You bet! Possibly not all this week, but when stored properly, most of this will be good for 2+ weeks.

I bet you’re wondering how we’ll use all that produce… well, we started out tonight by roasting some in the oven and topping off big bowls of pasta with the vegetables and some fresh grated parmesan cheese. And for dessert? How about some pudding and sliced fresh fruits? Yes, please! And Thank You. 🙂 And of course there will be plenty of snacks with all those fresh foods! (Hint: If you put out a bowl of cut up fresh vegetables and/or fruits while you’re cooking dinner, the kids will have something to snack on when they say “I’m HUNGRY!” Hummus or Ranch Dressing may make those veggies more appealing to the pickier eater.)

(I bet you thought I was going to be talking about a different kind of Bountiful Baskets, huh? Silly… the Easter Bunny hasn’t visited yet… that’s not til tomorrow!)

Garlicky Buttery Shrimp Pasta

  

Simple Garlic Shrimp Pasta

Tonight was the closing shift at my new job. But that wasn’t going to stop me from cooking up the shrimp that was waiting for me in the fridge!

Of course, you know me, and I was telling my co-workers how excited I was to get home and cook my dinner. Marc (with a c), who I have not worked with before tonight, seemed really excited about my dinner. I think he was a little jealous. He said he was trying to memorize what I told him about how I was going to cook the shrimp and what I would serve it with. Well, he seems like a nice guy, and he served 5 years in the Marines (Semper Fi!), so I decided to do a picture tutorial on this very simple dinner. It will be the perfect thing for him to make for a date to impress her. (All you other guys reading this need to pay attention, too! It’s easy! You can do it!)

A note about cooking the shrimp. There is only one person who has ever intimidated me in the kitchen with his knowledge. And I really learned a lot from him the few times we cooked together. One thing I learned from him is that cooking the shrimp with the shells still on gives them more flavor. The shells are where the flavor is. (Duh! I can hardly believe I hadn’t known it before. But I’m glad I got to cook with David a few times and add to my food knowledge. 🙂 ) So, it’s up to you, but I would recommend leaving the shells on for more flavor. For a date, perhaps you want to remove the shells before serving so she doesn’t have to fumble with trying to be polite and proper when she really just wants to rip the shell off with her fingers and not care how messy she gets. Just sayin’. 😉 And now, on to the recipe (such as it is…you know I rarely follow a recipe!), complete with pictures.

First thing's first, gather up your ingredients. For tonight's dinner, I grabbed just a small amount of angel hair pasta, the shrimp (I had 6 large ones), 3 tablespoons butter, 2 cloves garlic, 1 small tomato, 1 green onion, Parmesan cheese (Please note the time-- 9:55pm)

Right after snapping this picture, I added water to the pot and turned the burner on high to get it boiling for the pasta. At the same time, I put the pan with butter on a medium-high heat to melt while I peeled and sliced the garlic cloves.

Add the sliced garlic to the butter and cook until just before the garlic turns brown. (This will take about a minute or so)

Remove the garlic from the butter, leaving the butter in the pan. The garlic will continue to cook a little more and will end up lightly browned after it is removed from the pan. You can eat this, use it to top the pasta, or throw it away. Totally up to you.

By this point, your pasta water should be boiling. Angel hair pasta takes only 4 minutes to cook to al dente, which really helps to pull this meal together in no time at all. Get the pasta into the water and set your timer for 4 minutes. Don’t forget to stir the pasta so it doesn’t stick together.

Add the shrimp to the butter in the pan and let those little guys bubble away getting all that garlicky, buttery goodness cooked right into them! Is your mouth watering yet? Each side will cook for 1-2 minutes.

While the pasta is boiling and the shrimp are sizzling in the butter, you have time to run your knife through the tomato and green onion. Just cube the tomato into bite-size chunks and slice the green onion. (I use just the dark green parts for this recipe, and reserve the white and light green parts for another use.)

Once the pasta is finished cooking, drain it and put it into a pasta bowl or onto a plate with a rim that will hold the juices in. Then remove the shrimp from the butter (leave the butter in the pan, you’re not done with it just yet!) and place on top of the pasta.

Add the tomatoes and green onion to the butter in the pan. Toss gently, just enough to warm the tomatoes a bit (this should only take about 30 seconds), and then pour the entire contents of the pan, butter and all, right over the top of the pasta and shrimp.

Excitement!

I owe you all so many posts. I had fun trying new foods with my kids in February, but was having so much fun and there were so many new and exciting things happening in our lives that computer time was limited at best. That’s a good thing, right? 🙂 I still want to share with you some food fun we had, and I will try to back-track and do that soon. In the meantime, I wanted to share with you some exciting news: I am changing jobs and career path! I realized I need to work directly with people and start working towards some larger life goals, so I have gone to work where I get to learn about coffee, talk to people, and smile all day long (and they pay me for this?!) This is going to free up a lot of time for me to get into college, learning about nutrition and so much more. It’s an exciting time!

And here’s some more excitement: My best friend talked me into offering my weekly menu planning and shopping lists to subscribers to make a little extra money. I wasn’t sure how that would work, but found a lot of people interested, and so I’m giving it a shot and I’m excited to launch my first email subscription with an aim to launch by April 1st (eek! That’s only a week away, isn’t it?! I better get back to my menu writing!)

Loves of my Life

Heart Day Dinner for the Loves of my Life! xoxo

I celebrated my first Valentine’s Day as a single woman by recognizing the true loves of my life. The two people I spend the majority of my free time with. Who love me unconditionally (even when they “hate” me momentarily), and who I love unconditionally.  They bring me joy every day with their smiles and their laughter. They keep my life interesting and bring a ray of light even on my darkest days.

They are my favorite boy and girl in the whole wide world. They talk back. They forget to do their homework. They drive me crazy. And I love every minute of it, because more importantly, they have smiles and hugs that would melt an ice queen’s heart, they tell stories about their day and about their friends. They tell jokes. They fight and they love and they do it with their entire heart and soul.

I love you, my favorite kiddos! Thank you for sharing Heart Day with your silly mama. xoxo

So… what did I make for these most fabulous kiddos of mine? Nothing super fancy, just some of our favorite foods, shaped into hearts. My easy meatloaf, paired with roasted carrots [drizzled with olive oil and tossed with chopped red onion], julienne beets, and some mashed potatoes [I used up the last of the ranch dressing I made last weekend and that added really great flavor, along with the homemade butter I mixed in.] Comfort food with great conversation and giggles at dinner.

Reusable Memories

Stacks of Memories!

I use real dishes. Yes, even for parties with many people in attendance, I use glass plates, glasses, and flatware, and I even use cloth napkins. It’s not that I’m a snob about dishes. Not at all. I have a hodge podge mix of plates, bowls, glasses, flatware, and napkins. There are matching sets among the mix, but for a large group, nothing matches, and I rather prefer it that way. It’s casual. It’s fun. It’s me.

When the party is over and all the guests have left, I walk around and pick up stray plates, glasses, and whatever else is sitting on tables, window sills, next to chairs… and this brings a smile to my face, because I know that everyone enjoyed themselves and as I stack up the plates and line up the glasses, it’s like I’m stacking up memories with every clink of dishes hitting against each other. And those memories will get to come out and play again and again as those dishes are used for nightly family dinners, dinner with friends, parties “just because”, impromptu get-togethers, and much more. And those memories are worth more than any possible breakage might cost to replace.

Remember: Use the good stuff. Today is special.
