Well, Blog Friends, I’m ready to be back at the office tomorrow.
I’m exhausted after my "Over the Top Christmas BUNCO" on Friday (which the last 2 friends did not leave until after 1am… One of them was waiting fer her daughter to get home from an away ball game, and my place is just a mile from the school, so I told her to just hang out and we visited.)
On Saturday was a party at My John’s boss’s house. It started at 5, but we didn’t get there til 6:30 and then stayed til after 11. By the time we left, we had been visiting with his boss and boss’s wife, plus 3 other lingering guests for well over an hour.
Today I was just feeling lazy and yucky all day. I did my office work here for a couple hours and then a friend of My John’s dropped by that… well, that I can’t stand to talk to because he’s so negative about everything… so I sat in my room and watched Christmas movies.
BUT…. for those "menu seekers" out there, I don’t have a set menu because we have a weird week, but I know that I can make the following things on any night without going back to the store:
Old Faithful (pork chops)
Korean Beef Bowl
I will probably do Tacos (or Taco Salad) for tomorrow night. Tuesday is the kids’ dad’s birthday, so they’ll go to dinner with him that night. Thursday is a dance after school for Felicity and the Winter Concert for Haden. And Friday school is out at 12:10 and then it’s Winter Break! Crazy week…. and somewhere I have to find time for some shopping…..
Well, off to bed. G’Nite!
Today was my "work from home" day. I got a lot of things accomplished today, writing letters, organizing myself for the upcoming busy weeks of site visits and reviews.Tomorrow I’m at the main office and I should be able to accomplish a lot more.
I used my lunch break to go meet with a mortgage broker. She gave me hope that I could get a loan. I’m going to work hard these next few months to pay off my smaller credit cards and save a bit of money. I should be able to get at least SOMETHING set aside for a small downpayment. I’m getting excited that we might actually be able to buy a home in the next year. I firmly believe that everything happens for a reason, and that when the time is right, things will fall into place. I know that when the right house is available, everything will work out.
On to DINNER!
I pulled some pork chops from the freezer last night, and tonight I made Old Faithful. It was a big hit, as always. We’ve got a "kinda menu" for the week.
For tomorrow, I’m using the chicken burgers from Trader Joe’s that I bought last month. They’re flavored with herbs and garlic and oh-so-good! My John will grill them up (they’re fully cooked, so just need to be warmed, and the grill will add a nice flavor!), and we’ve got onion buns and some tomato. Some oven fries to go on the side, and a big salad to round out the meal.
Thursday I’m working from home again, so maybe I’ll throw a pot of spaghetti sauce on in the morning and let it simmer away all day. Then I can make lasagne next week, too.
Friday I have a review at one of the properties. I think we’ll plan to have a "kid dinner" with some fish sticks that were on sale awhile ago, and are still sitting in the freezer. LOL I used to call it "gourmet" cooking when I pulled out the fish sticks, complete with "fine china" of paper plates! LOL Well, either that or we’ll do salisbury steaks with mashed taters. I’ll let the kids choose. They love both….. I guess we can do one on Friday and the next on Saturday.
Sunday the kids go to my sisters’ house for the week. They are attending a day camp at the college she works at, so the kids get camp and time with Aunt & Uncle all at once. They will come home on the 4th.
So, that’s my week….

Last Day of School… we’ll probably order a pizza and watch a movie
Kids off to their dad’s for a week…. dinners will be "for two"….. maybe I should make them "for four" and freeze some meals for later! And share with Mom & Dad, too. (I still owe them some dinners…. I better make them something really nice this month! ;))
Saturday & Sunday we’ll have some date nights after yard work and housecleaning. It’s time to declutter another space in our apartment and put together a yard sale.
I am determined to clear out the freezer so we can defrost it, so we’ll start using up what we have in there soon…..

AY YI YI! It’s been over 2 months since I posted?!?!?!? Why didn’t y’all send out the search party for me?
Well, things are crazy as usual. We’re beginning to look at houses, hoping to get a place. I just found one in my searching yesterday that’s really cheap, but for good reason. I look it as a challenge, and it looks like it has great potential. It would be great to get it, and start fixing up a place of our own…..
No menu plan this week, we’re wingin’ it……
Tonight was Rib Roast, Potatoes & Asparagus. The leftover rib roast wil become french dips later this week. Tacos for the fam tomorrow while I’m at the PKD Chapter meeting. Tuesday I’m home, so I might make an actual dinner

We got "off menu" this week….. Tuesday My John took the kids shopping for my Birthday gift and took them to Arby’s for dinner (I’m not a fan of Arby’s….. LOL So they go there when I’m not with them!) And I was not feeling well, so had a potato and layed in my chair watching TV all night….
Wednesday, my Birthday, I had to take Felicity to get glasses. By the time I got home, I was not in the mood for Shrimp Creole anymore! So we decided to go out, even though it wasn’t "in the budget". We have the money, we just are trying to budget better….. it was Birthday dinner 😉 We went to Beau’s and I have seafood fettuccini 🙂
Thursday’s roast also went out the window, with a last minute Birthday Party invite to a pizza party from one of Haden’s friends…..
Pretty pathetic, I know…. LOL
But I’ve got it under control this week, I think……. I hope……..
My very own Mr Mom!!! My John has been playing the "Mr Mom" role for awhile now, since I took on my new position and work more hours than ever before, with lots of travel.
Monday-Thursday is pretty simple… the kids go to an after school program for homework help, which goes til 5pm. I was concerned when the program started that it might make for long days and burnt out kiddos. But do you know what it’s done? Given us our evenings back! There’s rarely a night they don’t finish their homework before coming home, so all My John or I have to do is look over it with them, and make sure everything is done. No more homework battles!!!!
Of course, My John gets done at his first job at about 3pm… but, this doesn’t generally leave him with 2 free hours. He makes sure dinner gets on the table. And he ALSO is the maintenance & grounds guy for 2 apartment buildings (the one we manage and live at, and another one that my company began managing Jan 1, and his sister is the on-site manager) So he takes care of any maintenance that needs to be done…… no rest for the weary…. It’s no wonder he falls asleep on the couch as soon as dinner is done. Poor guy!
I work from home a couple days a week, so he’s not always all on his own. We cherish those days I’m home and make sure we have a nice, relaxing, homecooked meal on the table.
My John did a great job with a new recipe, Beef Enchilada Casserole…. it was a huge hit! Definitely will come back to the menu again.
Tomorrow is Corned Beef & Cabbage, to cook in the crockpot while I am on a trip for work. I’ll be back in time for dinner :~)

What a whirlwind couple weeks it’s been! Last weekend I took a trip to Nashville and got a chance to meet a friend that I’ve known online for probably about 7 years!!!! She took me to her FAVE store, and when I make it to our local one (well, not really local…. I’m sure the nearest one is at least 60 or 70 miles away…. lol) I’m sure it will become my fave, too! Whole Foods! WOW! Just the way they keep their store makes it such a great place to be. Very relaxing atmosphere, the food is gorgeous!!! There’s a few pics in the "Nashville" album.
For lunch in Nashville, Amy took me to the Loveless Cafe`! WHAT A GREAT PLACE! I tried fried okra for the first time. It was good. The Loveless Cafe’s "Biscuit Lady" was on Throw Down with Bobby Flay!!!! And the biscuits are awesome. They sell biscuit mix that’s close to the original recipe, so I got some to share at home. The blackberry jam… oh! it’s. oh.so.good!!!! It’s like the jam Grandma & Mom made!!!!!!
On my return from Nashville, some major things came up at work, and some unexpected trips have had to be planned……. but I’m still planning my menus!!!!! I’ll post the weeks’ menu soon…. we’ve got some good food coming up this week, with plenty of easy meals for all you busy moms & dads 🙂
I’m stranded…. at home.
Monday when I left work, I planned on returning the following morning, so I left my computer….. yeah, not a good idea. The pass closed Tuesday morning around 7. And it remained closed until Wednesday at around 11am, when it was re-opened, but not for long. If you saw the pictures I posted last night, you know there was an avalanche on the pass and it closed again at about 3pm, and has been closed since then. Yes, there were some cars in the slide. No, nobody was hurt. AMAZING! Just totally amazing! Late this morning, they announced that they will not assess the conditions and the possibility of re-opening the pass until Friday morning at 9…… so I’m still stranded, without my computer 🙁 I have my personal comuter, so I’ve been using that for some communications. And I’ve talked to my on-sites by phone. I’m doing what I can from home, and feeling like a Stay at Home Mom again….. kinda nice, but I’m also a little restless, since I’m not used to being home this much, anymore.
I’ve used my time wisely. Got caught up on some housework that’s been lacking… taken my time to enjoy cooking a couple meals… and then going crazy again when everything is done!!! lol
So, I’m getting ready to post a couple recipes for you. I shared the Jerk Chicken Nachos with you, and one of my online friends has decided it would be a good Super Bowl Sunday food, and she’s making it Weight Watcher Friendly. YAY, Amy! Enjoy!!!!!

I guess I’ve neglected my site for awhile. It’s been a roller coast around here…
I’ve lost 3 people in my life, way too soon. An on-line friend that I cared for lost her long battle with cancer in October. My boss, and good friend, passed away suddenly just 3 weeks later. And last Friday our community lost a good man in a tragic car crash. He was the husband of one of my very close friends.
All 3 of these losses affected me, and all in a different way, but also the same, as I realize life is too short. Tell those around you that you love them. Do those things that you want to do "some day". Don’t wait, just do them!
Amongst the sadness, comes some joy. In the passing of my boss, the "big boss" offered me her position in the company, and did so knowing that my family comes first, so I am working half-time in the office and half-time from home. This will allow me to be here for my kids, my family and my friends (because my friends are part of my family, too). It’s bitter-sweet, but I know Leslie would have wanted me to take the job…..
So, on to the point of my Space…. the FOOD!
First, our community has really rallied around my friend in the loss of her husband. There is a calendar set up to sign up for taking the family dinners for the next several weeks. The firefighters stood on a corner in town last Sunday and raised $7.200 for the family. There are bank accounts set up to donate money to help the family, and several direct-sales consultants (including myself) are donating their entire commission through December. My sales are also being sent in as a Fundraiser, so my company will donate money, and the commission I earn will also be donated to the family.
Also in the works is a Spaghetti Feed and a Bake Sale. Please email me email@example.com if you’d like to contribute in some way to help this family.
My menu planning took a back seat this week… I was working a lot and we had a ton of food in the fridge, so we basically threw together our meals from leftovers. LOL
Yesterday’s Thanksgiving dinner was very non-traditional. We grilled up a nice London Broil and cooked up some King Crab legs. MMMMMM It was wonderful!!!!
Tonight we’re doing a repeat of that again…. lol
And tomorrow is the Celebration of Sonny’s Life. Potluck after the Celebration, and I think I’ll make one of my cakes…..
After that we’ll get a menu planned out for the next couple weeks. My John has been great about sitting down with me to plan the menu. Some meals he has to make, since I work later than he does. And he’s been great about it. Even having the table set by the time I get home….
So, this morning I’m off to take the kids to see Santa at the mall. I love doing this…..

Yes, I’m a total slacker! I guess soccer season kinda got away from me, and menu planning went by the way-side……. I’ve been missing the blogging world a bit.
So, tonight I will share with you our dinner… We tried a recipe from a new cookbook… Tex-Mec Chicken & Rice Skillet! MMMMMMM It was oh-so-yummy! The kids even liked it, and asked for more. (And then made me promise I’d make it again! lol)
My John & I are trying to get in a new routine of menu-planning. We’re finding that with our work schedules and the kids’ schedules, we need to have a plan set in place for the week. Sunday evenings we have been sitting down and going through the calendar and planning dinners around what activities are planned. I like to use a menu planner from TheHomeSchoolMom.com. It allows space for planning breakfast, lunch and dinner, notes to the right (we list our schedule for the day in that section) and a grocery list to the left. It’s a wonderful tool that I am so glad to have found!
Well, we’ve done a lot of cooking, and I have some recipes to add soon. I also have some pictures (big surprise, right? ;~)
For tonight, I’ll say g’nite so I can get some rest for tomorrow. Our dinner tomorrow will be Navy Bean Soup (or maybe Split Pea… I don’t know…)
